Vegan Bean Soup Made With Our Black Bean Dip & Spread

INGREDIENTS:

  • HEROICA! Black Bean Dip & Spread
  • Bonafide Vegetable Broth or Chicken Bone Broth
  • Wild Harvest Black Beans, Organic
  • Sweet Bell Peppers, chopped
  • Avocado, sliced, to serve
  • Parsley, fresh, to garnish
  • Homemade Cashew Cream – to serve. Ingredients:
    • 6 oz raw Cashews, organic
    • 1/4 cup raw Pine nuts
    • 1 Tablespoon unsweetened coconut yogurt
    • 1/2 garlic clove
    • 1 Tablespoon water
    • 1 1/2 Tablespoon fresh lemon juice
    • 1 ½ teaspoons Apple cider vinegar
    • 1/2 teaspoon salt
    • 4 oz unsweetened coconut milk
    • 1/4 Tablespoon chopped onion

PROCEDURE:

  1. Heat 2-4 cups of broth in a small to medium saucepan.
  2. Add 1 cup of HEROICA! Black Bean Dip & Spread. Mix well.
  3. Add 1 cup of black beans.
  4. Let the broth and beans heat over medium heat.
  5. Serve with fresh avocado slices, sweet bell pepper, and homemade cashew cream.
